"1. Set the sheet up in SHELF ORDER, not alphabetical order. You count by walking the room, and a sheet that matches the walk is twice as fast.",,,,,,,,
"2. One row per item, in the unit you actually count in. If you count cases, count cases. Do not convert in your head at 6am.",,,,,,,,
"3. Count on the same day at the same point in the week, with the restaurant closed. A count taken mid-service is fiction.",,,,,,,,
"4. Use two people: one counts out loud, one writes. It is faster than one person doing both, and it removes most single-person errors.",,,,,,,,
5. Extended Value = On Hand x Unit Cost. In a spreadsheet put =E2*F2 in the Extended Value column and fill down.,,,,,,,,
6. Order Qty = Par Level - On Hand. Anything above zero goes on the order. Anything well below par every week means your par is wrong.,,,,,,,,
7. Keep every completed count. A single count tells you almost nothing; the comparison between two counts is where the information is.,,,,,,,,
8. Update Unit Cost whenever an invoice price changes. A sheet with stale costs values your inventory wrong and hides supplier price creep.,,,,,,,,
